What kind of food is this?

Boiled whitebait with some of the moisture removed. Per 100g: 24.5g protein, 280mg calcium, and 480mg phosphorus.

Sodium is 1700mg — about double the 840mg of boiled shirasu. As the water goes down, salt becomes concentrated along with the minerals and protein.

How to serve

It is high in salt, so remove the salt before use, for example by dipping it briefly in hot water.
