The dark-colored part of the tuna's flesh. Even among fish it is especially high in iron, with barely any fat—a cut that is mostly protein.
One parasite to watch for when using it raw is Anisakis. Tuna and its relatives are named in official sources as fish that can carry it.
How to serve
In red-fleshed fish, histamine can build up when left at room temperature. Once formed, histamine is not destroyed by cooking. After buying, do not leave it out — refrigerate or freeze it right away. Also, large fish like tuna tend to accumulate mercury, so rather than making it a daily staple, use it as part of a rotation.
