What kind of food is this?

A long, slender root vegetable. Fiber is 5.7g per 100g — about twice the average of the vegetables in our database — and magnesium is a solid 54mg.

Its standout feature is inulin, a soluble fiber. Inulin resists digestion in the small intestine and is known as a prebiotic, used by bacteria in the large intestine. As it ferments, short-chain fatty acids are also produced.
