What kind of food is this?

A thick-capped mushroom. Per 100g: 4.9g fiber, 5µg selenium, and 0.9mg zinc.

Mushroom beta-glucans are a type of polysaccharide, studied for links to the gut environment and the immune system. Eritadenine, characteristic of shiitake, is a compound studied in relation to lipid metabolism.

What sets it apart from other mushrooms is that it carries not just fiber but shiitake-specific compounds as well.

How to serve

Cook and chop finely before use. Use only mushrooms sold as food; do not use mushrooms growing in your yard or along walking routes — they are hard to tell apart, and some cause poisoning.

When you have these care goals
