What kind of food is this?

A grain made by steaming and flattening barley. With 12.2g of dietary fiber per 100g, it has the most fiber of any grain in our tables.

Barley beta-glucan is a soluble fiber that differs in structure and behavior from the beta-glucan in mushrooms. It holds water and is used by gut bacteria, and its relationship to stool and the gut environment is being studied.
