What kind of food is this?

A seasoning made by fermenting soybeans with koji and salt. Sodium is 4900mg per 100g — especially high even among the other foods listed here.

During fermentation, some soy protein breaks down into amino acids and peptides, creating flavor and aroma compounds. That said, miso is not something to use in quantity as a nutrition source in dog meals.

Miso's role is to add a small amount of fermented umami and aroma. It has both faces: fermented food and salt-heavy seasoning.
